Variety selection is very limited due to a lack of interest in and knowledge of the crop. One variety called Ober Kulmer Rotkorn, constitutes about 80 to 90 percent of all spelt planted in Ontario. Soil preparation should begin in mid September, or when it is normal for the soil to be prepared for planting winter wheat in your area.
The seed bed should not be too fine. As most seed drills cannot accommodate this high rate of seeding many farmers seed in one direction ,then cross the field again in the opposite direction. Make sure the seed is covered, if necessary harrow after seeding. If the spelt did not have a good germination in the fall, a spiked tooth harrow should be used to encourage side shoots tillering to fill in the spaces.
Because spelt is a fall crop, it is not prone to severe weed problems. Spelt can be direct combined or windrowed and threshed similar to winter wheat. If there are many weeds, the crop should be windrowed and the windrow allowed to dry for a few days. The crop can then be picked up and threshed with a combine fitted with a pick-up attachment. The combine should be adjusted in a manner similar to that for harvesting oats. No performance data are available for Minnesota or Wisconsin.
The value of spelt for feed is similar to oats on a per pound basis. However, because the test weight of spelt can vary considerably, the feeding value could be lower than for oats. Hence, the demand for seed is limited. The demand for spelt may increase in the coming decade, however, because of its recently developed uses in the food industry.

Spelt is generally more winter hardy than many soft red winter wheat varieties. Unlike many other grains, spelt can be grown on low fertility soils that are poorly drained; it also grows well on sandy soils.
